Lemon Ricotta "Biscuits"

We had some leftover ricotta cheese (I don't even remember what from anymore) so I decided to make this recipe. It's in my Food Network cookbook, but it can be found online here.

Despite some negative initial reactions from the boys about putting ricotta cheese in something sweet, these turned out very nicely! They were much more like a muffin then a biscuit though -- very moist and fluffy with a mellow lemon flavor. The almond flavor (extract in the batter and slices on top) really tied everything together. Perfect for a late Sunday breakfast!
